17 Day Diet: Parmesan Chicken HEAVEN

  As you know, because I keep talking about it, Z is currently KICKING BOOTY on the 17-day diet. I've actually lost a few lb's as well just by sharing dinners with him. Most of the recipes are a little on the boring side but this one is anything but. It's absolutely our favorite 17-day diet recipe... and probably in our to 10 all-time recipes! To think that we're actually eating on the 'healthy' side is kind of hard to believe... but the scale doesn't lie!

FIRST you need to whip up some delicious homemade, LOW FAT marinara.

1/3 cup olive oil 2 cloves garlic {or more if you're like me and LOVE garlic!} peeled and sliced 3 tbsp finely chopped parsley 3 tbsp finely chopped onion {I end up using a little more than 3 tbsp for a little extra kick} 1 can of 28oz whole tomatoes {break them up if they aren't already} 1 bay leaf dash of salt dash of black pepper fresh basil leaves

1. In a large saucepan, heat oil over medium heat 2. Add garlic and saute for 2 to 3 minutes 3. Add parsley and onion. Slowly add tomatoes. 4. Add bay leaf, salt and pepper, bring to a boil. 5. Cover and simmer over low heat for about 15 min for flavors to get nice and friendly 6. Add some fresh finely chopped basil leaves if available serve over dish

How tasty does that look!?

Strain the sauce or puree in a food processor if you prefer a smooth sauce and correct the seasoning to your taste.

You can make the sauce ahead of time or while cooking the chicken parmesan. It re-heats really well and is just as delicious every time. Now moving on to the main event... you will need:

1 lb chicken cut into chunks/strips 2 eggs beaten or 4 egg whites beaten with 4 tbsp water {you can get away with one egg and a few tbsp of water. Just enough to coat the chicken.} 1/4 to 1/2 cup Fat Free Parmesan Cheese + 1tsp garlic powder + salt and pepper to taste {in ziplock bag} 2 tbsp Olive Oil

Dredge chicken in egg mix then place in the parmesan mixture.

Shake to coat chicken generously with seasonings

Cook in 2 tbsp olive oil until cooked through.

The 17-day diet allows you to have basically as many veggies as you want so I served our chicken over sauteed mushrooms and spinach and a happy side of steamed broccoli. Of course you can totally drown it in your healthy marinara sauce! There's a ton of flavor so you don't actually need much but either way, you'll have plenty left over for future dishes.
